OK, you guys have my curiosity going. I just picked up a John Deere 316 with a shot motor. This is a BIG tractor with a 16 horse Kohler. Assuming that I run the accessories off of a separate motor, how big of an electric motor would I need to drive the tractor?

an advance dc motor series wound with an alltrax 48volt/400amp controller will do the trick... but really depends on what your budget is...

There is a guy near me with a bunch of used Forklift motors that he bought for a project that never went anywhere. I think that they're only 2-3 horse though.
My budget is in the range of "as cheap as possible".
 
Here's a neat conversion..... says he used a 2.4 hp 36volt motor.....seems to work pretty slick.

is this your tractor? if so the you can scratch the controller all you need is the motor and an emergency heavy duty switch(panic button)
as for the motors only being 2-3 hp it will work because the dc motor will pruduce 3 time the torque they are rated for.. i use a 1.5 hp motor in my electric murry ride on an i have never had any problems with it and it has plenty of torque for when i'm hauling wood... so don't be concern if it's only a 3hp motor the will do the job... here is a vid on one of my tractors with the 1.5 hp motor working..
