Congrats, that is an awesome machine you are about to get hold of!
I hadn't heard that wheel weights can't be used on the X700 series. Hmmm. Some of the owners will chime in on that, I'm sure. It could be that the special "SE" rims don't accept the mounting bolts for the wheel weights.
But suitcase weights are a very nice way to add ballast, and traction. So she's not necessarily steering you wrong in that respect. Another option, is to have them "fill" the rear tires with a ballast fluid, like Rimguard. You can put a lot of fluid weight in those 26x12-12 HDAPs.
With filled tires, and some suitcase weights, you should be golden.
