Any idea what the value of a good used soft winter cab for a 4-wheel rider
would be? Ballpark range?

Whew that's a tough one.... I'd really have to say it comes down to the purchaser. To me, in NC where it's been 70* for the past two days, winter things such as a cab are worth very little.

You don't see many of them offered for sale though either so I'd say they are worth a bit to the right purchaser.

I paid $150 for mine. It's in fair condition and was (still is) missing the rear mounting brackets. I never got around to fixing it up and having the brackets made. Maybe I'll get to it this summer.
Looking at one that a JD dealer got their hands on somehow. They're asking $350, which seems a bit high to me. I was think more in the $200 range as a blind initial guess. Probably will at least have a look at it and go from there.

I did not see any manuals on oldgravelys.net for the optional cab(s). Am I missing it perhaps?

I paid $530 for mine new, they usually go in the 700 range, mines in my avatar, 350 isn't bad if its in good shape offer 300 cash say that's all I got, I'm sure there's not a line of people asking about it.
Being at a JD dealer he's use to high prices, and if it were at an Ariens/ Gravely dealer it would be more likely to sell.
I depends a lot on the cab. If it's the 3 sided "shower curtain" type, I paid $60 for mine on CL, they are $150-250 new. If it is the hard top, soft sided OTC cab, they go for many hundreds new. Do you have a picture so we can better advise? You ought to be able to get a new Deere soft cab for around $350.

I couldn't help but to laugh, I think he is right about JD prices.

I went and looked at it this morning. It is a hard top with three soft sides and a windshield with wiper which is currently removed. Frame looks to be complete, but it was not obvious how it attached to the tractor. I also did not see any Gravely logos on it, which was surprising to me. He also had a 44" power broom, w/shafts (also $350). I did not see evidence of holes or brackets on the 16-G is was supposed to be mounted on, so I'm thinking it was not used (at least on that tractor).

Just doesn't look to be all there to me, but could be wrong...

That looks like an OTC (Original Tractor Cab) cab, a nice unit, and the glass windshield with wiper is a desirable option. Offer him $600 for both the cab and sweeper.
Well I paid $350 (used and not in perfect shape) to get one for my 318 and I easily put another $200 in it to get it ready for use. That looks to be in very good shape if it's all there! I'd say it was worth it!
I sold 2 this winter for $600 each well used

First, the glass windshield just sits in the correct spot on the frame, then the roof is placed over it to hold it in place, so don't worry about the windshield being "removed".

Second, my OTC cab had clamp-on brackets to attach to the fender well on the bottom of each "foot" on the frame. That could explain why there are no holes in the tractor it came off of. Sadly, I had to cut the clamps off and bolt the cab to my tractor because the clamps weren't wide enough for my foot wells.

Third, the only thing I don't see in the picture is the doors, unless that is one on the left. If they are there it looks pretty complete to me. The frame looks to be there, and I think I see the apron for around the engine compartment behind the windshield.

Assuming it's all there, the last thing to think about is your controls. I don't know your tractor or whether you are using a blade, broom or blower, but will you have access to and articulation of all necessary levers and cranks? I ended up having to install a linear actuator to replace my manual lift arm and move the position of my chute controls, but it was well worth it. The OTC cab (and power lift) are a huge upgrade from my old setup.

Here's a link to the cab from the OTC web site:
