Parsnips

I love 'em. I've never had them except roasted, like with a pot roast. Anyone have a different way to do them?

Alton Brown just did a show about them. Try them in muffins. Another way to eat them is to make a sauce like applesauce using parsnips and pears.
I like to wash them, slice them and dip in flour/cornmeal and pan fry.
I like to substitute them for potatoes with my 'possum bake. When it's time for dinner, I set the pan outside for the critters and go to Outback...

it is a white root vegetable. Similar looking to a carrot but with a completely different taste. I like mine boiled some and then pan fried in butter! :trink40:
