How would I clean out the Hydrostat trans? Can I drain all the fluid and maybe spray brake clean and then run some new fluid through, drain it out and then fill with new fluid?

I would guess kerosene would be a safe solvent for such an obsolete unit. Wouldn't want anything harsh attacking unobtanium parts and seals.

Hi jay, this is Wayne from the corral. I'd just drain it good and refill it, then when you get it running just redrain it after a few days of use to get the nasties out.
