how do you run your deck?

When cutting grass, do you let the deck roll on the wheels, or have it suspended and have the wheels touch once in a while or somewhere in between?

I don't put the weight of the deck on the wheels. My wheels don't have bearings or grease fittings so I don't believe that they would hold up to prolonged usage under weight.
It depends on who made your equipment. Simplicity & Ingersoll have ground contour decks. Most others have suspended decks with anti scalp wheels like JD. slkpk
The manual for the JD 62C (23XX series tractors) deck specifically says that the deck is to be adjusted so the wheels are about 1" off the ground when in the mowing position. They are to keep the edges of the deck from contacting the turf.
I set mine up in the shop, drop the wheels, then pick them up to the next stop so that they are floating. No scalping in my wavy yard.
This place (MTF) is amazing. I got a 318 a few months ago and was going to ask the same question as this. I guessed but was not sure. And here I go with answers before I even asked. Thanks you all.
What equipment are you using? Is it a mid mount or rear finish mower?

Adjusting Mower Deck Wheels

IMPORTANT: Avoid damage! The mower deck can be damaged if mower wheels are adjusted wrong:
• Wheels must not ride on ground supporting mower weight.
• Check wheel adjustment each time cutting height is changed.

1. Inflate tires to correct pressure.
2. Raise mower deck to highest (transport) position and adjust cutting height.
3. Lower deck to mowing position.
4. Park machine safely. (See Parking Safely in the Safety section).
NOTE: Bottom of wheels should be approximately 6-13 mm (1/4-1/2 in.) from the ground.
5. Pull gauge wheel release rod (A) and position wheel in correct hole (B). See decal located on deck.

I have to adjust mine, there seems to be a bit of tension on them when mowing
