Honey and cream....

We had experience with enjoying honey & cream corn a few years ago from the good graces of a neighbor. I would like to grow some for ourselves. I have three tiers, each about 18" wide by maybe 30' long and setting side by side. I was thinking of planting the seeds near the edges of each tier in a sort of 'W' fashion and keeping a space of maybe 18" or so apart from seed to seed. I have just recently found out that I should put two seeds in each location, culling the lesser one. I also heard that corn is pollinated by the wind. Is this true? Is there anything 'special' to do? Would it be better to have a 'patch' rather than rows? The overall garden area is 50' x 75'. We normally have tomatoes, squash, beans, bell peppers and cukes.
