The knurled ring pulls back against the spring. Then the u-joint assembly slides off the spline.
If you've got a lot of dirt/rust in there, it may not want to slide off. You might have to rig some kind of clamp to hold the ring while you work the assembly off of there.

Just a heads up the bushhog deck comes in a long and short shaft model you have the short. I had to add weight to the front of the deck to get it to balance right if not a pro 12 is engine heavy and wants to pull the deck off the ground.
Probably around 45 lb they are counter weight from a medical machine and hard to come by gravely made their own weight at one time they were 30 lb I think. But are collectable and as such expensive. I have barbell weights on my snow blade.
Total and that is just a guess . I had them laying in the garage so that is what I used as I said the weights gravely sold are said to be 30 lbs last pair I saw on Ebay they were $200 . I have 300-400 lbs of lead so that is what I used .
That is my first newer Gravely . I have always had L series before. I was actually gifted this tractor with a snow blade. Only thing it needed was a battery. I have spent many hours mowing with the old style 40 inch commercial deck the 40 in "kidney deck" you have is far better . I have bought a finish mower deck like you have and a bushhog deck.
So i got the shaft off but now I think I am missing a peice. I will need longer bolts for sure. The ones currently used to attach the qh to the machine are in now way long enough. What part am i missing here ?

WHere did you get your bolts to mount the brush cutter. The only ones I have are the ones originally used to mount the kidney mower. THey are way to short. I see you have longer ones. THanks
When you removed the quick hitch, you may have lost the trunion block down in the oil sitting in the bottom of the advance casting.
Its easiest to just insert the splined coupling into the horizontal shaft on the bush hog and then mount the attachment to the quick hitch. My splined coupling never leaves the bush hog, even when stored.
Two male and two female studs are common and give you the most flexibility with quick hitch attachments. The retrofit kit will include two female studs for use with longer 1/2-13 bolts to mount it.

This gentleman would save a lot of effort by using the reference library. I suggest he also try www.GTCOA.com for manuals as it probably has more than is available here and its very easy to navigate. I think some of the photos are confusing for him when dealing with a professional series walk behind that needs the retrofit kit. There is a style of QH back in one of those photos with the horn and casting removed. The one showing the four bolt plate on top. That's not the retrofit kit its just another version of the QH.
