Pork butt has been on the smoker for a couple hours and almost ready for tje 1st mopping. Im trying a new rub today that i didnt make. Jonny Triggs rub. But i did make the mop and cut the pecan wood. Lol.

Butt was soaked in apple juice, rubbed with brown mustard and then dry rub. Set overnight and then rubbed again this morning. And place in smoker along with a good handful of jalepenos to make chipotle peppers.

Mop recipe

1 cup apple juice
1/4 cup cider viniger
2 table spoons worchester sauce
1 table spoon soy sauce
1/4 cup dry rub
1 tablespoon olive oil.
Optional
1/2 teaspoon ground chopotle pepper

Mop every 2hours and final 30 mins i will apply a light bbq sauce to carmalize

oh man that looks good. i think i could almost smell it thru the computer LOL!
So the wife took the kids and my niece to pick peaches and i was drink a nice 12yr old beverage and i had an idea. How about a nice peach bourbon bbq sauce to go with dinner tonight. Ill post recipe in a bit.
you can have the hog, i,ll take that 12 year old stuff.jk does look good.

And the peaxh bourbon bbq sauce recipe.

2 tbl spoons Paula Dean sauce aka butter the real stuff
1 1/2 cup fresh pitted, peeled,& diced peaches
1/2 cup bourbon of choice mayve more if you like to sample a little
1/2 cup diced sweet onion
1minced clove garlic
1cup katsup
1/3 cup cider vinegar
1/3 cup brown sugar i add a little more
2 table spoons ea of the following: dijon mustard, honey, molasses, worchestershire sauce
1/2 teaspoon luisianna hot sauce or more to taste
Salt to taste

Melt butter in pan and add onion and garlic until fragranr then combine the rest of the ingredients and cook on med- low heat simmering down. Blebd with imersion blender or trusty normal blender until smooth. Better after it rests atleast 1/2 day but always better the next day.

i'm headed to the bottle myself here in a jiff...someone has a heck of a smoker going in my area. whole side of town smells like BBQ

its really making me HUNGRY for some old slow cooked smokey goodness MMMMMM:)

Ok screw it im getting a roast in the morning and throwing it in the smoker LOL
