Gotta replace a head gasket. After the head bolts are removed, what's the safest way to break the head free from the cylinder without breaking off any cooling fins?

Just give it a lite tap with rubber mallet or piece of wood and it should pop right off. They are not glued or sealed to the block/gasket so it shouldn't be a problem.

An old timer showed me a trick to get a stuck cylinder head off without damage, on a flathead ford V8--he soaked the studs with liquid wrench,after loosening the nuts,and then just hit the starter,and the compression popped it right off,and it was stuck pretty good!..he said sometimes they stuck so bad they actually RAN the engine with the nuts loose on the studs,until the head popped free!..
