Wife and I decide we wanted some beef ribs for the 4th.
I've got the beef ribs and some chicken thighs marinating as I type. I'll throw them on the smoker in a couple more hours, waiting for the outside temps to drop this evening. Heat warnings have been issued for our area, heat index of 105*F. I'm not worried about the heat but the humidity drains the life out of you. LOL!
While the meats soak up their marinades I've been making side dishes:
Onion/Bell pepper shish kabobs, soaked down with Italian dressing.
Stuffed Jalapeno Boats / Bell pepper: Stuffed with Lobster meat, Parmesan / mozzarella cheese, cream cheese, finely chopped onions, left over breakfast sausage patties and spiced it up with my favorite seasoning mix. Using my bread stick cast iron pan to cradle the peppers.
Stuffed Mushrooms: Used the same stuffing as above with a little red wine in the pan.
Made a mushroom soup for lunch from the left over stems and discards from making stuffed shrooms. Cream of chicken soup and seasoned to taste...mainly fresh ground black pepper!
