Take the hub cap off, take the colter pin out and underscrew the nut and pull the whole thing off. While you have it apart you can check the bearing but I would probably replace them since you are going with new hubs. But why not just replace the 2 bolts if the hub is in good working order?

The studs are a pressed or drive in fit and yes you just use a hammer. Take the hub off and support it as it is not a good thing to beat on bearings.
