We raised a few of them years ago. The only way I've had them was quartered, and fried. Pretty tasty.!!

I peel them, then slice in 3/8" or so thick strips, cook until just soft, slap them in the skillet with margarine, salt+pepper, fry til brown. That's the only way I ever had them!!

Been several years since we had any due to voles/mice destroying them in the ground, so this year I dug them a bit earlier and it was about the right time! thanks; sonny
